Bloomed Cacao Nibs $3.95

Hey Everyone!

Remember those wonderful Chocolate Covered Cacao Nibs of ours? One was a Maca chocolate covered flavor, and the other one was a Camu Berry chocolate covered flavor.

Well, a portion of the chocolate covered coating on them bloomed.

What does chocolate blooming mean?

It means that it went out of temper. Tempering is when you heat and cool the chocolate in order to stabilize it for making candies and confections. Tempering gives chocolate a smooth and glossy finish, keeps it from easily melting on your fingers, and allows it to set up beautifully for dipped and chocolate-covered treats.

Chocolate Blooming is the term used when you can see that the chocolate has gone out of temper, and crystalizes to form a dull white finish on the surface of the chocolate, just like in the image below.

This can happen from inadequate tempering when originally creating the chocolate.

Generally, what chocolatiers do in this case is melt it down and temper it again.

Anyhow, our chocolate covered cacao nibs went out of temper, and a portion of them have turned into this whitish color. They are completely safe to eat, they have just bloomed and have gone out of temper.

So basically, the chocolate went out of temper, and it just doesn’t look as super good as it did before.

Anyhow, I am blowing them out way below our cost at only $3.95 each for a 1lb bag if that interests you.

I know that they are not as aesthetically pleasing anymore, hence why we are offering them for only $3.95 each. We have just about over 100 of each.
