Last week we offered our
Guarana on special. Today we have our Matcha on special in both our culinary and ceremonial grade.
Seems like it’s a stimulating month here at The Raw Food World, lol!
Anyhow, last time we offered Matcha, I went on a rant on how most of the stuff out there is not truly what they claim it to be. My guy who supplies people with Matcha was telling me that people will take the culinary grade and call it Ceremonial grade all of the time.
What we have for you today is truly the
highest grade of Ceremonial Matcha, and the highest grade of Culinary Matcha.
Let me tell ya all about our Ceremonial Matcha.
Our Ceremonial Matcha is harvested only from the first harvest of the season in order to get the youngest tender tea leaves. Since we have the top Ceremonial Grade of Matcha, they only hand select the top three sprouts at the very top of the tea bush. These extremely delicate sprouted leaves have the highest nutrient quality. They contain more chlorophyll
compared to the older tea leaves, and is responsible for imparting more of a vibrant breath-taking emerald green hue. These tender young leaves also have a higher concentration of caffeine and L-theanine.
It still only has the amount of caffeine as a 1/3 cup of coffee would have, but the energetic hit that you will get from this particular Ceremonial Matcha is the real thing. It makes your focus extremely smooth and clear, and provides you with a nice smooth hit of energy. Whereas coffee
will bounce you up and down all over the place.
Why is this?
Since L-theanine is naturally loaded in this particular Ceremonial Matcha, It buffers the negative effects of caffeine by inducing a feeling of relaxation by increasing alpha brain wave activity. This is what differentiates the caffeine content and energy boost one would experience with coffee versus this particular Ceremonial Matcha. The quality of caffeine and L-theanine naturally found in this matcha balance each other
out. Therefore, you get to experience elevated moods along with a calm, yet alert energy boost. This can last up to 6 hours without experiencing a “crash” or jittery feeling that one can anticipate after drinking coffee.
This state of mind is heavily produced by this particular Ceremonial Grade A Matcha.
For the tasting experience of our Ceremonial Matcha, due to the tender baby sprouts, you will never experience another matcha out there with such a smooth consistency and subtle
flavor. Our particular Ceremonial Matcha, is an absolute delicacy, which stands alone, and doesn't need any extra sweeteners or ingredients in order to mix with it. It's meant to be taken by itself. You simply mix it with hot water, whisk it, and enjoy.
On the other hand, you can mix our Culinary Matcha with whatever you want. It would just simply be considered a waste to mix our Ceremonial Grade Matcha with other ingredients, and that is why there is a Culinary Grade. Since our
Ceremonial Grade is loaded with higher levels of L-theanine, it is responsible for imparting a natural sweetness. This is why you drink this delicacy by itself without a sweetener or milk. These tender baby sprouts make the consistency extremely smooth, and the flavor is so very subtle. It develops a natural sweetness all on its own. Whereas the culinary grade will be more bitter like more of a tea flavor.
Now, the Culinary Grade is not bad. It is what most people are used to when it
comes to Matcha. It's generally used to mix with other ingredients. If you have any type of matcha blend product with other ingredients in it, it's definitely one of the culinary grades (even if they say ceremonial).
Instead of being harvested from the first harvest of the season, our Premium Culinary Grade A is from the 2nd harvest in the early summer. The lower culinary grades are generally taken from the 3rd harvest or older. There is one mid-higher grade where they mix the 2nd
and 3rd season harvest together. All of the grades of Culinary Matcha tea leaves are “older” and have been exposed to more sunlight. These older tea leaves impart a bolder flavor due to higher concentrations of antioxidants known as catechin (contributing more of those “bitter” notes once culinary grade matcha is prepared).
The culinary grades still provides a beautiful color. It has a more subdued shade of green since it is made from the older tea leaves due to that extra exposure to
sunlight. The lower the grade of Culinary Matcha, the more yellow it becomes. While you can drink the culinary grade Matcha straight, it’s better not to. Its strong and slightly bitter taste is intended to be combined with other ingredients used in food and beverage recipes. Culinary grade’s mildly astringent flavor is what allows it to mix well with various smoothies, lattes, and other milk-based drinks.
There are many different grades of Culinary Matcha. The lowest culinary grade is
produced with the least amount of delicate leaves, the powder isn’t as fine as other matcha grades, the oldest leaves are used, it is a darker yellow/green, and it is very bitter. It is the most affordable grade and is generally used for large-scale brewing and most supplements. Unfortunately, many big coffee shops use this lower grade for beverages. If you are getting a Matcha Latte at Starbucks, you are likely consuming the lowest grade of Matcha.
Then there are a handful of Culinary
grades above that before you get to our top Premium Grade A Culinary Grade Matcha, which we are offering to you today along with our Top Grade A of Ceremonial Matcha.
For example, the next grade up from the lowest Culinary Grade of Matcha is generally mixed with older tea leaves that have stronger flavors. This gives it more of a thicker consistency, which works for using in recipes that contain dairy products, like ice cream, buttercream, and the like. The next culinary grade up,
generally comes from both the second and third harvests.
Now the top Premium Culinary grade is the other Matcha what we are offering to you today. It's more potent compared to all of the other Culinary Grades, which brings the flavor a bit closer to the Ceremonial Grade Matcha. The tea leaves all come from the second harvest in the early summer, which still provides a beautiful color, and a rich, distinctive robust flavor. This makes it perfect for blended preparations like lattes,
blended drinks, smoothies, and recipes.
Rest assured that if you are getting either our Culinary Grade, Ceremonial Grade Matcha, or both, you are getting the top, best of the best of each.
