Firstly, let me
explain how our specials work.
For example, when the month of November started, we offer many specials all throughout each week of the month. Each special offered in November is good through the end of November.
On occasion, I'll send an email out towards the end of the month, just like today, stating that this is the 'Last Special of the Month'. That simply means that there won't be any more specials or
new ground breaking Superfoods for the rest of this month. Therefore, you don't have to worry about missing out on anything, and it's safe to order,lol.
I hope that makes sense.
Anyhow, for the last special of the month, we have all of our Cacao 'At-Cost'. This includes our Cacao Powder, Nibs, Butter, and Paste. As many of you know, we now have two Cacao
Powders. One is the 10-12% fat Cacao Powder, and we also have a 20-22% fat Cacao Powder.
Some chefs state that the secret behind the most flavorful Cacao Powder is a the higher fat content. On the other hand, I have customers that love the lower 10% fat cacao powder, and would never switch.
The main benefit that you get from the Cacao Powder with a higher
20% fat content, is a more flavorful and richer taste.
The higher the fat content of your Cacao Powder, then the less starch content that it contains. The starches can absorb up to 100 percent of its weight in moisture. Some might like the moisture to be absorbed with the lower 10% fat content. It might be fun to have the liquid from fruit get absorbed in there, making a thicker recipe or
smoothie.
On the other hand, with the higher 20% fat content, it would provide a creamier richer chocolate flavor in your smoothies, protein drinks, yogurts, and so on. Some might not like the richer flavor and go with the 10% fat. It's all about personal preference here.
In baking it's advised to use the higher 20% fat Cacao Powder. Otherwise, it could lead to dry cakes, cakey brownies, crumbly cookies, and chalky
or bland chocolate frosting. With the higher fat content, the baked goods will become ultra moist and tender in texture. For example, brownies and cookies will be more chewy and fudgey, and frosting will be ultra smooth.
