Earlier this year, I
introduced you to our new Spaghettini Egg White Noodles.
Well, guess what?
They’ve just released a brand-new Angel Hair version — thinner, lighter, and perfect for those who love delicate noodles. These are technically called vermicelli noodles and bring a whole new texture to the table.
These fine vermicelli noodles are ideal for soups, stir-fries, and Asian-inspired dishes.
And of course, we still have the classic spaghetti shape, which works beautifully in all your go-to pasta recipes.
These new Egg White Noodles are a super cool invention.
They're made from just three simple ingredients: egg whites, water, and a tiny pinch (less than 1%) of algae extract called Sodium Alginate — which gives them their perfect noodle
texture.
Interestingly, Sodium Alginate is the exact same ingredient used in Kelp Noodles, and it plays a similar role here by creating that familiar spaghetti-like texture.
In fact, Egg White Noodles are quite similar to Kelp Noodles in how simple and convenient they are to use.
Just drain the water, and they’re ready to go. Toss them with
anything you like—no cooking required. Perfect for busy days or meals on the fly. And if you prefer them warm, you can easily heat them up, as I’ll explain further below.
The company behind these noodles is called Miracle Noodle—and honestly, the name fits. These Egg White Noodles are a literal miracle for anyone who loves pasta but wants to skip the carbs and load up on protein instead.
I gave a bag to Angela to try, and here’s what she had to say:
"It’s really interesting—it doesn’t taste like eggs at all. In fact, it doesn’t have much flavor, kind of like a blank canvas. It reminds me of plain pasta or rice noodles. The texture is just like regular noodles."
What’s especially great is that these Egg White Noodles soak up
the flavors of whatever sauce you pair them with—no weird aftertaste, just a clean noodle base with that perfect soft and springy texture.
They totally satisfy that noodle craving and even pass the ultimate pasta slurp test with flying colors.
You can also heat them in a pan with a little butter or oil, then toss in your favorite ingredients.
In fact, one popular Keto chef on YouTube made a full-on Spaghetti and Meatballs dish with them and said, “There’s nothing more comforting than a big bowl of spaghetti and meatballs.”
