We haven’t had our super-fresh Pili Nuts for
nearly half a year, but they’re finally back. Pili nuts are loaded with more healthy fat than any other nut, which makes them naturally rich in vitamin E — and incredibly satisfying to eat. What’s fascinating is that Brazil nuts straight off the tree are
also soft. The difference is that Brazil nuts must be thoroughly dried or they can spoil quickly on the shelf. Pili nuts are different. Their exceptionally high fat content and naturally low moisture create an environment where spoilage organisms simply can’t thrive. On top of that, their fats are more stable and naturally protected by antioxidants, which slows oxidation and preserves freshness. This is why pili nuts can remain soft, rich, and fresh without heavy drying —
something very few nuts on the planet can pull off. Keep in mind that we just imported them so they are as fresh as can be.
I personally love keeping our Pili Nuts in the freezer, where they firm up beautifully due to their high fat content. I’ll nibble off the skin with my teeth first, then enjoy the creamy nut inside, which tastes absolutely incredible. Eaten straight from the freezer, pili nuts take on an almost hard–soft, chocolate-bar–like texture,
whereas at room temperature they’re much softer. Just a heads-up: try not to eat too many at once when you do this — they’re dangerously delicious, and each nut has its own unique flavor. As an added bonus, storing them this way keeps them fresh essentially forever.

Next up, our Truly Raw Cashews are literally the best tasting,

Most cashews are processed using extreme heat to neutralize the caustic & toxic cashew shell oil. However, our Truly Raw Cashews from the Islands of Indonesia are processed with extreme cold in order to freeze and stabilize the oil on the shell.
Then the cashew shell can be hand sliced and opened using a special knife. This keeps the toxic oil off of the nut and
all of the nutrients locked into this creamy, tasty, versatile nut. The cashews are carefully sun-dried then finished off with some warm blowing air to get a nice crunch.
Next, we have our Walnuts and Macadamia Nuts, which are a bit trickier to work with since they can go rancid more easily. This particular supplier provides exceptionally fresh batches of both, and we’ve received nothing but rave reviews. On top of that, it’s winter, so they won’t be exposed to heat

For walnuts, most companies steam sterilize their walnuts, and still call them Raw. We don’t ever steam sterilize nuts. These Walnuts are of the Chandler variety, and are grown in the San Joaquin Valley, in California.

We also have those really fresh Certified Organic Macadamia Nuts from that very good ethical farm in Southern Africa. It's so hard to find good, fresh, high quality Macadamia Nuts these days, but these are incredible!

Lastly, I got a rare incredible price on his absolutely fantastic pistachio meats. Pistachios are generally dried quickly and at a high
temperature. It's kind of like a pasteurization step. However, these Pistachios are unpasteurized and slowly dried down to 5% moisture in order to keep them stable with a good self life. They are the best pistachio meats that I have ever come across.
